This Bergwerk wine from is , but once grapes are harvested, they are footcrushed IN the vineyard with a drumming ceremony and THEN funnelled into a Qvevri IN the same vineyard!
This Qvevri amphora is then sealed and only opened 322 days later, in time for the next harvest to go in! This means the entire wine is made in the vineyard!
Delicious wine too, and this coming from a team not too fond of Cab Sauv. It’s VERY nicely rounded in the tannins from the Qvevri Amphora. Light, slightly peppery, smokey, rich fruit. Ideal with a pork chop or steak.
