Domaine Macle – Côtes de Jura Chardonnay Ouille 2018 is made with 85% Chardonnay and 15% Savagnin, made in the topped off, non-oxidative method.
This wine is kept in tank for 6 to 8 months before malolactic fermentation, then put in Damy barrels for 1.5 years.
In the barrel, empty space is topped up, a process called ‘ouillage’.
This is as different to Sous-Voile Jura wines, which is not topped off and thus has wine lost in the barrel through the aging process.
