The Corte Giara Ripasso La Groletta is produced by the Allegrini family, protagonists of the agricultural history of Fumane since the 16th century. Allegrini is closely linked to the Valpolicella DOC, which originates in the province of Verona, and thanks to far-sighted choices, the company is now one of the leaders in Italy, and it is precisely from the family’s Valpolicella that the new generations of winemakers take inspiration. To keep up with the exponential growth of the company and reach a wider range of consumers by diversifying its products, Allegrini has founded other brands, including Corte Giara. This brand founded in 1989 produces young and innovative wines suitable for any convivial context.
The Allegrini Corte Giara Ripasso La Groletta is one of the revisited versions of Valpolicella to have the DOC certification, produced only in Fumane and among a few other municipalities in the Verona area. It is composed of 70% Corvina grapes and 30% Rondinella, grown in the typical variegated, mostly calcareous soil of the Verona area and harvested manually in the second half of September. After destemming and soft pressing, the must is fermented in stainless steel at a controlled temperature of around 23/28°C. Before aging, the peculiar second fermentation takes place as per the Valpolicella Ripasso regulations, on the dried marc of the Amarone, which gives it its characteristic aromas and increases its alcohol content. The second fermentation lasts 9/10 days with daily pumping over and is carried out in February. It is then aged in steel for 4 months, in Slavonian oak barrels for 11 months and the final aging in the bottle for 2 months.
