Organic, pas dosé classic method sparkling wine from Piedmont, produced by Contratto. 12.5% ABV, 100% Pinot Noir. 0.75 L bottle, 2021 vintage. An Alta Langa that celebrates the history of a winery founded in 1867, official supplier to the Vatican and the Belgian Royal House. The grapes are hand-picked and the juice is collected without pressing. First and second fermentations are carried out using only indigenous yeasts. Aged for 42 months on the lees. Intense golden color. Complex and deep nose, with aromas of cedar, toasted salted almonds, lemon curd, candied ginger, followed by a mineral finish. Vertical, almost sharp palate, sharpened by savory and freshness, it continues sinewy with a long, savory and citrusy finish.
