Domaine Overnoy – Savagnin Ouillé is a new style Jura wine, where to barrels are topped up rather than left with space inbetween, which is the more old fashioned oxidative method Jura used to be known for.
The Ouillé style is more common nowaways, which was a style pushed by Guillaume Overnoy’s uncle, Pierre Overnoy many years ago.
This Savagnin is hard to find. Grown on red marl and aged for two years in barrel.
A nephew to Pierre Overnoy, Guillaume Overnoy currently runs this 5.5-acre domain in the Jura which has been handed to him by his father, Jean-Louis Overnoy. The region this domain farms in is called Beaufort-Orbagna.
