Fidencio Clasico Espadin Joven Mezcal

Fidencio Mezcal is overseen by Mescalero Enrique Jimenez, working in a tradition that has been established over four generations. The spirit is produced in a traditional manner that is both biodynamic and soon to be certified organic. This mezcal is produced from the popular Espadin variety of agave, which is allowed to come to a maturity of at least ten years before being harvested. The agave are roasted and fermented using local, naturally occurring yeasts, and distilled in old alembic-style stills. The result is a wonderful, peppery spirit with a lingering smokey finish.
